That’s why we consistently invest in the development of our team — and the recent participation of Julhyana Veloso and Maria Paula in the Barista course offered by SENAR is a clear reflection of this commitment.


For Julhyana, who already works with coffee negotiations, the course was an important step toward her specialization. She emphasized how valuable it was to understand brewing methods, how equipment works, and the subtleties of extraction time — knowledge that once seemed distant but now directly connects to her work. Meanwhile, Maria Paula, who is in charge of the Quality and Classification department, saw the course as an opportunity to deepen her practical knowledge, correct habits, and especially to have her first hands-on experience with espresso and latte art.


Throughout the course, both were surprised by the richness of detail that influences the final result in the cup — from choosing the right method to matching it with the right bean, from grind size to extraction time. Maria Paula realized how much these aspects affect the flavor and began applying this knowledge to the filtered coffee she prepares for the company’s clients. Julhyana, on the other hand, was fascinated by the concept of Bypass and the importance of aligning the brewing method with the characteristics of the bean to reveal the coffee’s full potential.


A major highlight for both was the realization that the barista’s work is, in fact, a key link in the entire coffee chain. Without proper roasting, the barista cannot achieve a great brew; without technical knowledge, even excellent coffee loses its value. As Maria Paula pointed out, this experience brought a new perspective on teamwork and the vital role of each professional — from farm to cup.


More than just technical training, the course was a moment of alignment with EllerS Coffee’s purpose: to bring the market closer to the real consumer experience. By better understanding public preferences and the demands of coffee service, our team returns more prepared to build thoughtful connections between producers, buyers, and coffee lovers.
